Lactose free muffin recipe

Lactose Free Breakfast Muffins


Ingredients:

Crumble Topping

Directions:

    Preheat oven to 350°F.

    Sieve into a medium bowl, 1/2 cup brown rice flour, white rice flour, tapioca starch, potato starch, 1/2 cup brown sugar, baking powder, baking soda, guar (or xanathan) gum, sea salt, and 1 tsp cinnamon.

    Mix well.

    Add to it 1/3 cup canola oil, the egg(s), applesauce, and chopped apples.

    Stir lightly to combine and add additional liquid if needed. (Juice -- etc.).

    Line muffin tins and oil a little bit to prevent any sticking.

    Generously fill muffin cups with mixture.

    Put ground cashews or almond meal into a small bowl with the 1 tbls brown rice flour, 2 tbls brown sugar, 1 tbls canola oil, and 1/2 tsp cinnamon.

    Mix and sprinkle onto each muffin.

    Bake for about 26 minutes until done.

    Cool and enjoy for breakfast or a snack anytime!
My sister and I are going to go see my aunt in a couple weeks for a visit and to shop. As always, she sends us a list of places we may like to go to eat. At the top of her list she had named a pizza place. We didn't think anything of it until we looked it up...the descripsion of the pizza place states "...Our first ingredient is cheese". So we have planned a for a lovely dinner at a buffet. My sister is crossing her fingers she'll be able to eat something that night.

What to do when Dad, suddenly, has a pasion for making pizza...with lots of cheese:
1. Glare at Dad.
2. Look up some dairy free cookbooks for inspiration. Ex. "These Treats Don't Suck" by: Lauren Lopez.
3. Go crazy and bake/cook anything that sounds delicious!
4. Have Dad clean the kitchen.

Tonight for dinner we had subs. Mom forgot to ask for no cheese on my sister's. There was a pretty unhappy camper in our house tonight.

When did this start?

Saturday, December 29th, 2012, my sister and I took a trip to Ottawa to visit our aunt and to go shopping. The next morning, we woke up and had some Rice Krispies accompanied with some 2% milk. The only reason I remember this date was because of the car ride home. The first 15 minutes home was fine but as soon as we hit Kempville...things went down hill. My sister's face turned pastey white-and that's saying something because her skin shines like a dimond in the sun light its so pale. She kept saying she was going to be sick and her stomach was practically serenading me with some sort of whale noise.
As soon as she got home and made a complaint to our parents, they took her to the hospital just to calm her nerves. She walked out with the nurse balling her eyes out. My parents were expecting the worst. The nurse stood with my partents and said, "Well, she's not dying. She's not sick. She's lactose intolerance." My dad lauged and they came home.
Experts say that lactose intolerance is congenital disorder consisting of an inability to digest milk and milk products; absence or deficiency of lactase results in an inability to hydrolyze lactose. I say my sister's stomach is a sassy little princess who hates any dairy products and will punish her for ingesting any.
Don't get me wrong I feel bad for her, in a sense, but with her dramatics, it will be the problem of the century.

About Cheesy Truth

For anyone who is wondering, this blog is dedicated to the hilarious and numerous situations my sister finds herself in because of her tragic lactose intolerance. There are too many stories to share, so I hope you appreciate them and hopefully get a chuckle out of some.
